Don't teach them sigging. Teach them real stuff they might use later. Templates, logos, ect.

    oh dear god.
dont tell me that your plans were to show them how to use brushes and all that ----.

do u understand how insignificant sigs and brushes are?

Alright, heres what I would do.

I'd teach them to make something simple but good looking. Then at the end of that day I'd ask them all there favourite game/movie characters and bring some renders in the next day of them.

I'd put the CD's in and give each one the render they wanted then once everyone has their render I would teach them to make a decent signature.

Then I'd ask them what they wanted and stuff.

if this was me i would start out simple and just do sigs for a bit to get people started and then work your way up to logos and wallpapers then finally templates, stuff that is actually useful. As for the poster, my school has bulliten boards around people can put stuff on just make it very simple and easy to read and maybe people that are already into graphics will go. Maybe if you have somethign simiilar to a bulliten board then you can use it to attract people

Dark, it may be fun for you to teach them sigs and all, it'll be fun for them too.. I'm sure, but don't. Teach them the useful ----, gradients, pen tool, shapes tool, all the filters... etc. It will help them more, and I'm 100% sure that if they where better at GFX they'd have fun then randomly brushing and placing renders on a small canvas over and over again.
