If you can work the pen tool in PS, then you can work it in Illustrator. Just keep at it and you'll get used to it quickly.

On a 15 inch monitor, 1024x768 is usually the largest you can go without it being distorted.
Do you mean how to set it larger? Right-click your desktop, go to Properties > Settings. Personally I use 1280x800, my laptop's got a widescreen...
