One that allows manual focus. That's about all that you need. The cheap cameras have difficulty focusing on screens. You'll probably need a camera that allows you to choose the shutter speed too, otherwise you might have a shutter speed faster than the screen's refresh rate, meaning it will look pretty weird. I can't recommend any point and shoots that would do all of this automatically because I use a dSLR, but perhaps someone else can recommend one that does this stuff automatically. Soo... a nice camera. These features are included in some point and shoots, but are limited and probably don't come cheap, and it takes a bit of getting used to. Can't you just find a program to take screenshots?
You need to specify if you want video . Most people, like me, assume that "camera" is still images, while "video camera" is video. Go to Best Buy or some large electronics store and play around with their displays. See for yourself which ones will record the best image on the iPhone for the best price. Only if it's a point and shoot. Once you get up to pr0fessional equipment, Canon and Nikon are the best. Sony is just getting into the business so they aren't as high quality and don't have all the accessories. Sony is excellent for point and shoots though. Canon has some great ones too, and I enjoy "borrowing" their point and shoots from my friends to play with. As it is, it looks waay better if you record it directly on the phone. Go with Neuron's suggestion
