You do not make vectors in cs2 no matter how much you think so.
It has a pixels. You know those extremly big posters? Made from real vector programs such as illuastrator.illustrator does have a a lot more options for vectors. I just prefer to make the shapes in cs2 and then export them to illuastrator.

~Please don't talk about real vectors when you don't know anything about them.~

No, you can do vectors in PS - so long as you do NOT rasterize your layers. When you rasterize, then it is no longer a vector, but so long as you leave it unrasterized you can enlarge it all you want because it is just the paths.

And yes I know about vectors, I'm fully proficient in Illustrator and have done tons of vector work.

Unfortunately I never worked with EPS files in Illustrator, only AI, so I'm afraid I don't have an answer, and I can't try to work it out as I don't have Illustrator currently installed on my laptop. Sorry <_<

When you save it as an image it automatically rasterizes it.

Actually in the largest one, there's some blurring around the iris, so I wouldn't say it didn't lose any detail...the blurring is visible in the second image as well though not as much.

There is no blurring and girly is right. Shape programs in photoshop are vector and are made to be compatible with illustrator

Then maybe it's my monitor but I do see some distinct blurring at the edges of the brown part of the eye (the iris).
