Viruses are an example, every time they mutate their outer protein coat they are evolving. Evolution is just a series of mutations.
Science and God's word never conflicted each other... when they do conflict, you're either not looking at science anymore, or you're not looking at God's word anymore. Personally, I believe God is who He says He is, and I have no problems believing that in seven literal days, He made the universe and all that is within. I mean, _He's God_ ... what couldn't He do? He even says He'll recreate the heavens and the Earth all over again, so you can see _first hand_ that he did it in seven days ^_^ Anyway, if you believe evolution, big bang, or whatever, go for it. Just don't let it separate you from God and the salvation of Christ ^_^
